1. Almond Cream Cheese Pancake ( Keto )

Ingredients


Almond Flour - 60 gms ( 1/2 Cup )
Full fat cream cheese - 125 gms
Baking powder - 1/2 tsp ( Optional )
Eggs - 4
Granulated Sweetener - 1tsp
Cinnamon - 1/2 tsp ( Optional )
Butter ( for frying )



Instructions


1. Take a bowl, add 60 gms or ( 1/2 Cup ) of Almond flour, then add 125 gms ( 1/2 Cup ) of Full fat cream cheese in it and mix it well.
2 . You can also add 1/2 tsp of baking powder ( Optional ) if you want your pancakes super-fluffy.
3 . Now add 4 eggs, 1 tsp of Granulated Sweetener and 1/2 tsp of Cinnamon ( Optional ) to the batter and mix it well with a blender.
4. Take a Non-stick pan, add a little butter on it.
5. Now add the Keto Almond Cream Cheese Pancake batter on the ( medium heated ) pan. Turn over once the centre begins to bubble.


Important Tip


Keep your pancake small ( 10 -12 cam in diameter ) because when compared to regular pancakes the almond flour pancakes are little fragile due to lack of gluten.




2. Fluffy Coconut Flour Pancake ( Keto )

Course - Breakfast
Prep time - 5 mins
Cook time - 5 mins
Total time - 10 mins


Ingredients


Eggs - 4 ( Separated )
Butter - 90 gms ( 1/2 Cups )
Coconut Flour - 4 tbsp
Coconut Milk - 2 tbsp
Baking Powder - 1 tsp
Sweetener - 1 tsp
Cinnamon - 1 tsp



Instructions


1. Take a blender, add melted butter, egg yolks, 4 tbsp Coconut flour, 2 tbsp Coconut milk, 1tsp baking powder, spice/Sweetener if using and mix it well.
2. Take a clean bowl ( Metal ), add egg whites and whisk it until it gets stiffer.
3. Fold the egg whites in the Pancake batter.
4. Take a Non-stick pan and melt some Butter on medium heat.
5. Now add the Coconut Flour Pancake batter on the ( medium heated ) pan. Turn over once the centre begins to bubble.






3. Low Carb Cinnamon Swirl Pancakes ( Keto )

Ingredients


For pancake Batter
Almond Flour - 60 gms ( 1/2 Cup )
Full fat cream cheese - 125 gms
Baking powder - 1/2 tsp
Eggs - 4

For Cinnamon Swirl
Melted Butter - 60 gms ( 1/4 Cup )
Cinnamon - 1 tsp
Powdered Sweetener - 1 tbsp
Pancake batter - 3 tbsp ( made earlier )


For Cream Cheese Frosting
Cream Cheese - 60 gms ( 1/4 Cup )
Powdered Sweetener - 1 tbsp
Almond Milk - 1 tbsp



Instructions


1. Take a blender, add 60 gms ( 1/2 Cup ) Almond flour, 125 gms Full fat cream cheese, 1/2 tsp Baking Powder, 4 Eggs in the blender and mix it well.
2. Add a knob of Butter on a Non-stick pan on medium heat and let it melt.
3. Now add the Pancake batter on the pan and add some Cinnamon Swirl.
4. Place a lid on the Pan.
5. Once the top starts to firm up ( about 2 minutes ) turn the pancake over and fry the other side of pancake with swirl ( about 30 seconds ).
6. Now add, 60 gms of Cream cheese, 1 tbsp Powdered Sweetener, 1 tbsp Almond Milk ( to loosen ) and mix it up.
7. Add the Cream Cheese Frosting in a piping bag and decorate the Pancake with it.


Important Tip
